Add your email in COPYRIGHT

I’m working on the upgarde to hatching and pyproject.toml for that the hatch-tryton plugin is extracting the authors out of the COPYRIGHT file with the optional email address.
For now we did not include the email address of the copyright owners.
In order to update them all at once, if you have a copyright and want to include your email address in it, please answer here with your “Name <email>” to be updated.
