I have a question related to the French legislation “Loi Anti-fraude (Anti-Fraud Law)”. Is Tryton certified or have any other information on the subject?

Normally the current implementation should be enough to consider that the system complies with the requirements (immutability etc.). (Even if technically this is impossible to comply without have a trusted third party).
But Tryton is not certified to my knowledge (and it would probably require a new certification for every release). So for now you should request an attestation from a supplier.
In Spain we had a similar law and Tryton complies all requirementes without any change.
