We use a custom theme on our deployments but we did not plan to sell it.

Indeed building a theme for Tryton is like building a theme for a boostrap website. There are some webpages that [allow to build your own withtout coding.](https://pikock.github.io/bootstrap-magic/index.html). Once build you just need to include the css file in the root of you sao installation and name it custom.css

Be careful, sao is still using Bootstrap 3 (not 4).
There is also [Bootswatch: Free themes for Bootstrap](https://bootswatch.com/3/)

Also sao does not even use the Bootstrap default theme (aka `bootstrap-theme.css`) but only the basic styling in order to ease usage of any other theme.
